Paddy Mallon is the owner and long term visionary of Arthur Mallon Foods. He has been involved in the business from the earliest days of the famed butcher’s shop his father founded in 1942. He has grown from a young man helping in the butcher’s linking sausages to industry recognition for his product and recipe generation within a new state-of-the-art facility. Paddy is beloved by his team for his commitment to people, a strong team spirit and his relentless pursuit of perfection through craft and taste. With bold plans, he’s continuing to shape a family legacy built on a love of exceptional quality food.
Brian Walsh

As our Managing Director, Brian leads the team with 34 years of extensive food industry experience, spanning R&D, technical, commercial, and integrated operational roles. He’s renowned for his comprehensive expertise and his passion for guiding the business forward. A dedicated GAA and Kilkenny hurling fan, Brian also spends many weekends enjoying life on his home farm.

Stephen brings three decades of FMCG experience from both global and Irish markets into our leadership team and is known for fostering strong customer partnerships and driving growth. He’s respected for his commercial acumen and dedication to the business. Outside of work, Stephen enjoys spending time cycling to unwind and recharge.

With 30 years in the business, Helen is a cornerstone of our leadership team and knows the business inside and out. Having risen through quality and technical roles to her current position as Head of Operations, she’s been instrumental in establishing our new facility and driving our success. Beyond work, Helen is an avid runner and a dedicated marathoner many times over.

Pamela brings 20 years of finance expertise to the leadership team, including 14 years with Mallons. She was instrumental in rolling out our new ERP system, which is a vital part of moving the business forward. Outside of work, Pamela enjoys cooking and taking her two gentle Rottweilers out for walks to unwind.

Cathy brings over 25 years of HR experience to the leadership team, including two decades in the food industry. She’s dedicated to creating workplaces where employees feel valued and empowered to do their best work. Known for her approachable and people-first mindset, Cathy focuses on fostering a positive, engaging culture. Outside of work, you’ll often find her at concerts or enjoying forest and beach walks with her dog.

Sarah leads our marketing function bringing over 20 years of experience in the food and drinks industry. Her career spans commercial, trade marketing, and brand marketing roles through to senior brand leadership. In her role she ensures that each brand in our portfolio is impactful and strategically aligned. Known for her keen eye for detail and consumer-centric approach, Sarah builds brands that are both meaningful and effective. Outside of work, she unwinds through sea swimming and enjoys travelling, often discovering new cuisines through local cookery courses.

Derek is our Culinary Innovation Manager and brings over 21 years of expertise in crafting exceptional food solutions. His journey began as a passionate seventeen-year-old in the kitchens of Michelin starred restaurants and has since evolved to leading new product development and culinary innovation teams. Now, he’s on a mission to push the boundaries of flavour and bring delicious meals to tables across Ireland and beyond through Arthur Mallon Foods. Outside the kitchen, Derek is a dedicated GAA referee at a national level and an enthusiastic supporter of local community sports, always finding time to enjoy family life. For Derek, food is a lifelong passion and a craft he’s honed from day one.

With more than 15 years of procurement experience in food and beverage, with the last six years heavily focused on sustainability, Manuel ensures Arthur Mallon Foods’ sourcing aligns with strategic goals while striving to make our spend as sustainable as possible. He manages supplier relationships and ensures every procurement decision supports our long-term vision. Outside of work, Manuel is an avid foodie who loves discovering new food spots and exploring nature.
For Alison, Arthur Mallon Foods has always been part of the family. Her father started working with Arthur in the original butcher’s shop, delivering orders on the bike before becoming the very first Arthur Mallon Foods van driver. So, when Alison joined the company at 15 for a summer job wrapping sausages, it felt like the most natural thing in the world.

Next year will mark 40 years since Tony Murphy first walked through the doors at Arthur Mallon Foods. Over the decades, Tony has worked in just about every corner of Arthur Mallon Foods, from production, to dispatch, to maintenance. Today, he’s a Facilities Engineer, but he still talks fondly about those early days side-by-side with Paddy on the line. When asked to describe Mallons in three words, Tony didn’t miss a beat: “Happy go lightly"
