Greek Style Sausage Traybake

Shopping List

  • 2 Packets Mallon's Low Fat Pork or Turkey Sausages
  • Low cal spray oil
  • 1 Red onion, peeled and cut into wedges
  • 2 Courgettes, cut into chunks
  • 300g Yellow and red cherry tomatoes, cut in half
  • Freshly milled salt and pepper
  • 80g Rocket leaves
  • 1/4 Cucumber, peeled, deseeded and cut into chunks
  • 50g Feta cheese, crumbled
  • 12 Kalamata black olives, pitted and cut in half
  • A pinch of Chilli Flakes
  • A small handful chopped Basil
  • 2 tablespoons Balsamic Vinegar

Cooking Instructions

Cooking time: 20 minutes. Preparation time: 10 minutes.

Oven temperature 200oC (180oC Fan) / Gas mark 6

Method

Preheat the oven and spray a large baking tray with oil. Arrange red onion, courgettes and tomatoes onto the tray and roast in a hot oven for 5 – 10 minutes.

Add sausages to the tray and continue to cook for 8 – 10 minutes until the sausages are thoroughly cooked.

Remove the vegetables and sausages to a large serving dish. Scatter with rocket, Feta, olives, chilli flakes and chopped basil. Drizzle with balsamic vinegar just before serving.
